A simple and quick low-carb appetizer featuring sweet peppers stuffed with seasoned boudin sausage and baked until tender.

Preheat oven to 400 degrees. Cut the front part of the pepper off and remove the seeds. Remove the skin from the sausage and crumble it in a bowl. Stuff the crumbled sausage into the hollowed-out peppers and place them on a cookie sheet. Bake at 400 degrees Fahrenheit for 10 minutes. Sprinkle with fresh parsley before serving and enjoy!
