Spinach & Artichoke Orzo Salmon

1. In a skillet over medium heat, add the oil and sauté the salmon on both sides for about 5 minutes or until medium rare. 2. Remove and set aside. 3. In the same skillet, melt the butter and sauté the shallots and garlic for about 3 minutes. Add in the spices and stir to combine. 4. Stir in the orzo and chicken broth. Bring to a boil then cover and simmer for about 8-10 minutes or until done. 5. Stir in the cream then add the artichokes & wilt the spinach. 6. Add the salmon back to the skillet, nestled in the middle. Cook on low heat for about 3 minutes or until the salmon is cooked to your liking. 7. Top with Parmesan and parsley. Enjoy!
