Warm yourself up with this Italian Wedding Soup, perfect for chilly nights. This version uses chicken Italian sausage, but you can substitute with other sausages or even meatballs.

1. In a pot over medium heat, add the oil and sauté the onions & carrots until soft, about 7 minutes. 2. Add the garlic, herbs & spice then add in the sausage. Sauté for 2 minutes. 3. Stir in the chicken broth & bring to a boil. 4. Simmer for 20 minutes then add the pasta. Cover with the lid and cook for another 10 minutes or until the pasta is cooked. 5. Remove the lid and stir in the spinach. Cook for another 2 minutes then enjoy!
