Pizza Chicken

This Pizza Chicken is another favorite from my cookbook so I’m sharing here with you all! It’s a great low carb option but you can add pasta if you’d like. Serve with a Caesar salad & you’ve got an easy weeknight meal. Save this post so you can come back & make it. I hope you enjoy it!

1. Preheat the oven to 400 degrees. 2. Pour 1 cup of the pizza sauce into a shallow casserole dish. 3. Add the chicken breasts (sliced down the middle, but not cut all the way in half so you can stuff them). 4. Add the diced tomatoes around the chicken. 5. Add the rest of the sauce between the 2 chicken breasts; then add the pizza stuffing. 6. Close the chicken and sprinkle with salt, pepper, and Italian seasoning. 7. Bake at 400 degrees for about 30-45 minutes or until the chicken temperature reaches at least 165 degrees. Optional: Add mozzarella cheese to the top of each chicken breast for an extra 5 minutes on broil until the cheese is bubbling.
