Jumbo shrimp stuffed with Boursin cheese and jalapeños wrapped in bacon. Served over cauliflower rice, inspired by Jalapeño shrimp poppers.

Remove shrimp shells but leave the tail on. Slice down the middle to open the shrimp up, trying not to slice it completely in half so the stuffing doesn’t fall out. Spread 1 tsp of Boursin into each shrimp. Top with 1 jalapeño slice. Wrap each stuffed shrimp in a slice of bacon. Bake at 400 degrees Fahrenheit for about 20 minutes or until the bacon is cooked. You can flip the shrimp over for the last 5 minutes to crisp up the bottom side of the bacon.
