1. In a shallow dish, whisk together the marinade ingredients (2 tsp garlic, 2 tbsp Dijon mustard, 1 cup apple juice, 1/2 cup olive oil, 1 cup water, 2 tsp salt, 1/4 tsp pepper, 1/4 tsp dry mustard, 1/4 cup apple cider vinegar) & add the pork tenderloin to the dish. Cover & marinate overnight. 2. Preheat the oven to 450 degrees. 3. Remove the pork and place on a cookie sheet lined with foil & cooking spray. 4. Make 2” slices, without cutting all the way through, down the tenderloin to stuff. 5. Spread the remaining 2 tbsp Dijon on top and sprinkle with salt & pepper. 6. Stuff with apples, onions & goat cheese. 7. Sprinkle with chopped pecans. 8. Bake at 450 for 30 minutes or until the temp reaches 165 degrees.
