- Preheat oven to 375 degrees. - Mash the bananas in a large mixing bowl. - Add all ingredients above to the bowl and mix until well combined. - Divide batter into 12 muffin cups or 2 dozen mini muffins and bake for 15-20 minutes or until a toothpick pulls clean when tested. Optional: sprinkle with cinnamon & sugar. Enjoy!
