Strawberry Chicken with Balsamic Glaze

Episode 3 of the Strawberry Series: this Balsamic Chicken has summer written all over it! This recipe features chicken marinated in a strawberry jam and vinegar mixture, then grilled or pan-seared, and served over spinach with fresh strawberries, feta, and a balsamic glaze.

1. In a small bowl, whisk all the marinade ingredients together. Pour over chicken in a dish. Marinate in the fridge for 30 minutes to 2 hours. 2. Remove chicken from marinade and discard the rest. Grill or pan-sear the chicken over medium heat for about 5–6 minutes per side, or until cooked through (internal temp 165°F). 3. Arrange spinach in a bowl or on a platter. Top with chicken, feta, and fresh strawberry slices. 4. Drizzle with balsamic glaze & enjoy!
