Inspired by a restaurant experience, this refreshing lemon granita offers a perfect balance of sweet and sour. It can be enjoyed on its own or as an accompaniment to dishes like raw oysters.

1. In a medium saucepan, combine the sugar and water. Boil for a few minutes until the sugar has dissolved. 2. Allow the syrup to cool then add the lemon juice and zest. 3. Pour into a shallow bowl or dish and place in the freezer for 1 hour. 4. Remove the bowl from the freezer and stir the mix around then place back into the freezer for another 45 minutes. 5. Remove the bowl again and stir the mix. If the mixture is still liquid then place the bowl back into the freezer for another 30 minutes.
