These stuffed cupcakes are so fun and easy! You have to make them for the holidays either for a party or just for fun. You can change the sprinkles, candy & colors to whatever you want.

Prepare the cupcakes according to the box, typically preheating the oven to 350 degrees, mixing all ingredients, pouring into cupcake liners, and bake for 12-17 minutes or until a toothpick comes out clean. Remove cupcakes from the oven and cool completely. While the cupcakes cool, make the icing. In a stand mixer, add the butter and beat on medium until smooth. Slowly add the powdered sugar on low speed. Mix in the extract & add food coloring if you want. Using an apple corer or small round object, hollow out the center of the cupcake. Fill the center of the cupcake with sprinkles and or small candies. Fill a piping bag with the icing and pipe the icing onto each cupcake covering the entire top so the sprinkles stay on the inside for a fun surprise. You can add more sprinkles on the icing if desired.
