1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper. 2. In a large mixing bowl, add the dry ingredients (oats, chopped nuts, cinnamon) and stir to combine. 3. In a small bowl, whisk together the coconut oil, honey (or maple syrup), and vanilla. 4. Pour the wet ingredients over the dry ingredients, and stir until all of the oats are covered entirely. Pour the granola onto the prepared pan and spread it out into an even layer. Bake for 25 minutes or until the edges are just starting to become golden brown. The granola will get crunchy as it cools.
