1. In a large bowl soak the beans in water overnight or you can use canned beans. 2. In a soup pot over medium heat, melt the butter then sauté the onions for about 7 minutes or until soft. 3. Stir in the green chilies, spices, herbs, & garlic. Cook for about 2 minutes. 4. Drain the beans and pour into the pot. 5. Stir in the vegetable broth & pickled jalapeño juice. Bring to a boil then simmer for 1 hour. 6. Using a hand mixer, blend the soup until smooth. Optional Garnish: sour cream, jalapeños & cilantro. Enjoy!
