I am always looking for low carb, healthy snacks that taste good too. 1. Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray. 2. Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry making sure all the liquid is drained. 3. Drain the artichoke hearts and coarsely chop in a food processor. 4. Combine all the ingredients in a large bowl and stir well. Spoon into the prepared casserole dish and bake for 30 minutes or until bubbling. Serve with your favorite bread or low carb crackers.
