1. In a plastic bag, marinate the chicken overnight in buttermilk. 2. Preheat the oven to 350 degrees. 3. In a shallow bowl, mix together breadcrumbs, corn starch, & seasoning. 4. In another shallow bowl, whisk 2 eggs then pour in the buttermilk & chicken. 5. Dip each piece of chicken into the breadcrumbs & place onto a cookie sheet lined with parchment paper. 6. Cook the chicken in the air fryer at 400 for 15 minutes then flip over and cook for another 5 minutes. 7. Remove from the fryer & build the sandwiches. 8. Slice the rolls in one piece & set the top aside. 9. Spread the mayo on the rolls, then add the chicken onto each roll (12 pieces), then top with cheese & slaw. 10. Add the top of the rolls, spray with Ghee or butter spray & sprinkle with salt & pepper. 11. Cook in the oven for 8 minutes. Enjoy! Apple Slaw: mix together 1 green apple sliced thin with 1 cup of cabbage slaw mix & 2 tbsp honey mustard dressing.
