1. Preheat the oven to 350 degrees. 2. In a medium skillet heat the olive oil over medium heat, then add the onions, green peppers and jalapenos. 3. Sauté the vegetables for 7 minutes, until soft. 4. Add in the spices and stir to combine. 5. Add in the chorizo and cook for 6 minutes over medium heat until cooked through, stirring often. 6. Deglaze the pan with the beer, add the beans and simmer for 3 minutes. 7. Grease a casserole dish then slowly pour in the chorizo and bean mixture. 8. Cook for 20 minutes then remove from the oven and stir in the cooked rice. *Optional garnish: red onions, cilantro and lime.
