This Cranberry Pork is one of my all time favorite recipes and has been in my cookbook for years. I make it every holiday because it’s stunning, festive, and always a hit. You need this on your table!

Optional step: marinate the pork in cranberry sauce overnight. 1. Preheat the oven to 425 degrees. 2. Butterfly the pork so you can stuff it. Sprinkle with my [Not So] Simple Spice or salt & pepper. 3. Add the cranberries then pecans & goat cheese. 4. Wrap up and secure with kitchen twine. 5. Place pork on a greased cookie sheet and rub the spice mixture (2 tsp salt, 1/2 tsp pepper, 1 tsp garlic powder, 1/4 tsp dry mustard, 1/2 tsp pumpkin pie spice, 1/2 tsp dried thyme, 1/2 tsp dried sage) onto the pork. 6. Bake for 40 minutes or until the internal temperature reaches at least 145 degrees. 7. Optional: add cranberry topping (1/2 cup dried cranberries mixed with 2 tbsp water & 3 tbsp honey) with fresh thyme & sage. Enjoy!
