What you need
cup olive oil

cup water

pork tenderloin

cup apple juice

cup apple cider vinegar

onion

cup goat cheese

tsp dry mustard

tsp table salt

tsp pepper

cup red apple

tsp garlic

cup pecan nuts
Instructions
1. In a shallow dish, whisk together the marinade ingredients (2 tsp garlic, 2 tbsp Dijon mustard, 1 cup apple juice, 1/2 cup olive oil, 1 cup water, 2 tsp salt, 1/4 tsp pepper, 1/4 tsp dry mustard, 1/4 cup apple cider vinegar) & add the pork tenderloin to the dish. Cover & marinate overnight. 2. Preheat the oven to 450 degrees. 3. Remove the pork and place on a cookie sheet lined with foil & cooking spray. 4. Make 2” slices, without cutting all the way through, down the tenderloin to stuff. 5. Spread the remaining 2 tbsp Dijon on top and sprinkle with salt & pepper. 6. Stuff with apples, onions & goat cheese. 7. Sprinkle with chopped pecans. 8. Bake at 450 for 30 minutes or until the temp reaches 165 degrees.View original recipe
