What you need
mozzarella cheese

tsp mustard powder

tsp ground black pepper

tsp salt

tbsp pickled jalapenos

garlic

cup jalapeno

oz pineapple chunks

unsweetened coconut milk

lb chicken strips
Instructions
1. In a bowl mix together all the ingredients for the marinade and pour into a plastic bag with the chicken. 2. Marinate overnight. 3. Preheat the oven to 400 degrees. 4. In a shallow pan, lay out the chicken and lay 1/2 slice of cheese then 1/4 cup of the jalapeño pineapple mix. 5. Next top with another 1/2 slice of cheese. Fold over the chicken to seal the inside. Repeat for the other chicken breast. 6. Pour the rest of the jalapeño pineapple mix into the pan around the chicken. 7. Sprinkle with Jerk seasoning and bake for 45 minutes or until the internal temperature reaches 165 degrees.View original recipe
