Carrot Fritters with Greek Yogurt Dipping Sauce

You have to try these Carrot Fritters! I had lots of fresh carrots and wanted to make something different. And I’m so glad I did because they’re so addicting especially with this Greek yogurt dipping sauce. Here’s how to make them:

What you need

tsp garlic

tsp salt

egg

tbsp fresh cilantro

tbsp fresh lime juice
cup plain greek yogurt

tbsp plain flour

cup carrot

tsp salt & pepper
Instructions
1. In a small mixing bowl add egg and whisk. 2. Add in the cilantro, garlic, spices, & flour. Whisk until combined. 3. Stir into the bowl of carrots. 4. Heat the oil in a skillet to medium then add scoops of the carrot mixture, about 2 spoon fulls. Repeat until your pan is full. 5. When the bottom is golden brown flip the fritter and continue cooking until the other side is browned. 6. Remove from the skillet and place onto a paper towel lined plate. 7. Continue until all the fritters are cooked. 8. Mix the sauce ingredients together & enjoy with the hot fritters.View original recipe
