Crispy Rice Salad

You’ve got to try my Crispy Rice Winter Salad! I used my favorite Basmati Rice Cups from @minutericeus They only take 60 seconds to heat up in the microwave so my meal is ready in minutes! Here’s the delicious recipe below. I hope you love it as much as I do.

What you need

pepper

cup goat cheese

cup mixed greens

cup butternut squash

cup pomegranate seeds

cup minute rice
tbsp vegetable oil

apple

salad dressing

cup pecan nuts
Instructions
1. Remove the film from the rice cup and place the cup in the microwave for 60 seconds. 2. In a sauté pan over medium heat, add the oil and rice. Sprinkle with salt and pepper. 3. Press the rice down in an even layer to crisp up. Let it sit for about 3 minutes. Then flip and cook for another 2 minutes or until crispy. 4. Remove from the pan and cool on a plate. 5. Build your salad. Add the lettuce to a bowl and the rest of the ingredients. 6. Add dressing of choice, toss and enjoy.View original recipe
