What you need
pork tenderloin

cup dried cranberries

extra-virgin olive oil

tsp salt

tsp black peppercorn

tsp garlic powder

tsp ground mustard

tsp pumpkin pie spice

tsp dried thyme
tsp dried oregano

gouda

flat-leaf parsley
Instructions
1. Preheat the oven to 450 degrees. 2. Butterfly the pork so you can stuff it. 3. Add the cranberries, oranges & cheese. 4. Wrap up and secure with kitchen twine. Place pork on a greased cookie sheet and rub the spice mixture onto the pork. 5. Bake for 40 minutes or until the internal temperature reaches at least 145 degrees. 6.
