What you need

cup low fat cottage cheese

tsp baking soda

ripe banana
tsp baking powder

cup all purpose flour

tsp vanilla extract

tsp ground cinnamon

pinch salt
egg
Instructions
1. Preheat oven to 350°F. Line or grease a loaf pan. 2. Blend bananas, eggs, cottage cheese, & vanilla extract in a blender until smooth. 3. Pour liquid ingredients into a large mixing bowl. 4. In a small bowl whisk together the remaining dry ingredients (flour, granulated sugar, baking powder, baking soda, cinnamon, and salt). Combine these with the wet ingredients. 5. Pour batter into prepared loaf pan. 6. Bake at 350°F for 40 minutes, then cover with foil to prevent the top from getting too brown. Cook for 20 more minutes. 7.
