What you need

bunch cilantro

tbsp olive oil

oz chipotle in adobo

tsp table salt

cup rotisserie chicken

cup fire roasted tomatoes

tsp ground cumin

tortilla

clove garlic clove

tsp dried oregano

lime

red onion

cup onion
Instructions
1. Heat the oil over medium heat in a large skillet. 2. Add the onion and sauté for 7 minutes. Add the garlic and cook for another 2 minutes. 3. Add the chipotles, oregano, cumin, tomatoes, stock, and salt. Bring to a simmer and cook for 5 minutes. 4. Transfer the tomato mixture to a blender and puree until smooth. Return the sauce to the skillet. 5. Stir in the chicken and cook for 5 minutes over medium heat. Taste and add more salt if needed. 6. Warm the tortillas on a griddle or pan and add chicken and optional garnishes to make the tacos. Enjoy!View original recipe
