Spinach & Artichoke Orzo Salmon

What you need
bunch fresh parsley

pepper
cup artichoke hearts

lb salmon fillet
cup orzo
cup heavy cream
tbsp olive oil
cup fresh spinach

oz parmesan cheese

tsp garlic puree
tbsp unsalted butter

cup chicken broth
tsp spice mix
tbsp shallot
Instructions
1. In a skillet over medium heat, add the oil and sauté the salmon on both sides for about 5 minutes or until medium rare. 2. Remove and set aside. 3. In the same skillet, melt the butter and sauté the shallots and garlic for about 3 minutes. Add in the spices and stir to combine. 4. Stir in the orzo and chicken broth. Bring to a boil then cover and simmer for about 8-10 minutes or until done. 5. Stir in the cream then add the artichokes & wilt the spinach. 6. Add the salmon back to the skillet, nestled in the middle. Cook on low heat for about 3 minutes or until the salmon is cooked to your liking. 7. Top with Parmesan and parsley.
