Strawberry Chicken with Balsamic Glaze

Episode 3 of the Strawberry Series: this Balsamic Chicken has summer written all over it! This recipe features chicken marinated in a strawberry jam and vinegar mixture, then grilled or pan-seared, and served over spinach with fresh strawberries, feta, and a balsamic glaze.

What you need

oz feta

bunch spinach

tsp fresh garlic

chicken breast

slice strawberries

tsp salt

tbsp strawberry jam
tbsp olive oil

tbsp vinegar

cup water

tsp black pepper

Instructions
1. In a small bowl, whisk all the marinade ingredients together. Pour over chicken in a dish. Marinate in the fridge for 30 minutes to 2 hours. 2. Remove chicken from marinade and discard the rest. Grill or pan-sear the chicken over medium heat for about 5–6 minutes per side, or until cooked through (internal temp 165°F). 3. Arrange spinach in a bowl or on a platter. Top with chicken, feta, and fresh strawberry slices. 4. Drizzle with balsamic glaze & enjoy!View original recipe
