Teriyaki Chicken Pineapple Boats

This was a super easy healthy dinner! A pineapple boat assembled with pulled rotisserie chicken mixed with gluten-free teriyaki sauce, brown rice, and pineapple chunks, topped with toasted sesame seeds, red onion slivers, and cilantro.

Instructions
1. Buy a cooked rotisserie chicken and pull the meat off the bone. 2. In a bowl, mix the pulled chicken with gluten-free teriyaki sauce until well coated. 3. Cut a pineapple in half lengthwise and scoop out some of the fruit to create a 'boat'. Chop the removed pineapple fruit into chunks. 4. Assemble the pineapple boat by layering brown rice, the teriyaki chicken mixture, and pineapple chunks. 5.
