What you need

tsp salt

lb crimini mushrooms
tbsp EVOO

yellow onion

clove garlic clove
tsp dried oregano

cup sherry vinegar
lb chicken breast

bunch fresh parsley

fl oz italian dressing
Instructions
-Dice chicken breast into 2” chunks and marinate in Italian dressing for at least 2 hours or overnight. -Sauté onions in EVOO until translucent, add sliced mushrooms, garlic and sherry and sauté until soft. Remove and set aside. -Remove the chicken from the marinade and sprinkle with salt, pepper & oregano. -Sauté chicken in the skillet over medium heat with EVOO until temperature reaches 165 (about 5min). -Add the onions & mushrooms back to the pan -Mix with the chicken & sprinkle with fresh parsley. -Pairs well with rice, pasta or potatoes and a green veggie.
