Greek Pork

It’s so easy, healthy & of course, delicious. I stuffed it with all my favorite Greek salad topping but you can get creative & add anything you want.

What you need
⅛ pork tenderloin

8 oz korean marinade
¼ cup skim milk greek yogurt

¼ cup feta

¼ cup grape tomato

¼ cup sardines

1 tbsp red bell pepper

¼ cup cucumber

2 tbsp red onion

2 tsp salt

½ tsp black peppercorn

1 tsp garlic powder

¼ tsp ground mustard

1 tsp seasoned salt
Instructions
1. Preheat the oven to 450 degrees. 2. Butterfly the pork so you can stuff it. 3. Spread the Greek yogurt over the pork then add all the other ingredients except the spice mixture. 4. Wrap up and secure with kitchen twine. Place pork on a greased cookie sheet, spray with butter or oil & rub the spice mixture onto the pork. 5. Bake for 40 minutes or until the internal temperature reaches at least 145 degrees. 6. Optional: garnish with fresh herbs & lemon wedges. Enjoy!View original recipe
