Emma’s Black-Eyed Peas

These Black-Eyed Peas are a fun twist on the classic; rich, cozy, and baked with smoky sausage and a red wine tomato finish that takes them way beyond ordinary. And yes, black-eyed peas are said to bring good luck and prosperity, so I’m not taking any chances! Perfect for New Year’s, Sunday dinner, or anytime you want comfort food with a little attitude.

What you need

tsp salt

cup cooked rice

tsp green pepper

tsp pepper

cup red wine
can canned black-eyed peas
bay leaf

tsp garlic powder

tbsp butter

tsp dry mustard

tbsp tomato paste

oz smoked sausage

Instructions
1. Preheat the oven to 350 and grease a baking dish. 2. Sauté the onions & peppers in butter over medium heat for about 7 minutes or until soft. 3. Add in the spices & garlic and sauté for another 2 minutes. 4. Stir in the peas and cook over low heat for about 5 minutes. 5. In a small saucepan, heat the red wine, tomato paste & bay leaf. Simmer for 8 minutes and then remove the bay leaf. 6. Pour the bean mixture into the baking dish, spread the sausage evenly over the top and pour the wine mixture over the sausage. 7. Bake at 350 for 50 minutes then stir in the cooked rice. Enjoy!View original recipe
