Tuscan Tortellini Soup

What you need

tsp salt & pepper
bunch fresh parsley
tsp dried italian seasoning

cup cheese tortellini

can canned diced tomatoes

cup half & half
celery sticks

cup baby spinach

tsp fresh garlic

oz italian sausage

cup chicken broth
cup mushrooms

Instructions
1. In a soup pot, add 1 tbsp olive oil and the sausage. 2. Brown the sausage then add the onion & celery. Sauté for 3 minutes then add in the Italian herbs & garlic and cook for another 3 minutes. 3. Stir in the mushrooms and cook for 5 minutes or until soften. 4. Stir in the tomatoes and chicken broth. 5. Bring to a boil then simmer for about 20-30 minutes. 6. Whisk in the half & half then add the spinach and cook for about 2 more minutes. 7. Last add in the tortellini and season with salt & pepper. The soup will be ready after the pasta has cooked for 5 minutes. Top with fresh parsley if desired. Enjoy!View original recipe
