Red, White & Blue Ice Cream Sandwiches

A festive, low carb & sugar free treat for the 4th of July holiday, featuring ice cream sandwiches made with Swerve Chocolate Chip Cookie mix and Swerve Confectioners sweetener for a keto-friendly dessert.

What you need

tbsp butter

tsp vanilla extract

can light coconut milk

cup fat-free sugar-free vanilla pudding mix

tbsp milk

box cookie mix

red apple
Instructions
1. Prep the cookies according to the box directions and cool completely before making the sandwiches. 2. For the ice cream, whisk all the ice cream ingredients (light coconut milk, vanilla collagen powder or sugar free vanilla pudding mix, Swerve Confectioners sweetener, vanilla extract or vanilla bean) in a bowl and pour into an ice cream maker. Turn on and blend until thick, about 15 minutes. 3. To make the sandwiches, use an ice cream scoop and add 1 scoop on top of 1 cookie. Add another cookie on top. Then roll in your favorite red, white & blue sprinkles. 4. Place on a cookie sheet in the freezer and repeat for the remaining cookies. Enjoy!View original recipe
