Latin Rice and Beans with Chorizo

What you need

tsp oregano

tbsp jalapeno

cup cooked long grain rice

cup dark beer

cup onion
tsp adobo seasoning

tsp ground cumin
tsp sazon

can black beans

oz chorizo

cup green bell pepper
Instructions
1. Preheat the oven to 350 degrees. 2. In a medium skillet heat the olive oil over medium heat, then add the onions, green peppers and jalapenos. 3. Sauté the vegetables for 7 minutes, until soft. 4. Add in the spices and stir to combine. 5. Add in the chorizo and cook for 6 minutes over medium heat until cooked through, stirring often. 6. Deglaze the pan with the beer, add the beans and simmer for 3 minutes. 7. Grease a casserole dish then slowly pour in the chorizo and bean mixture. 8. Cook for 20 minutes then remove from the oven and stir in the cooked rice. *Optional garnish: red onions, cilantro and lime.View original recipe
