Simple Shrimp & Grits

What you need

bunch fresh chives

oz shredded cheese

tsp salt

tbsp garlic

cup grits
cup low sodium chicken broth

cup water

lb raw shrimp

tbsp unsalted butter

tbsp cajun seasoning

tbsp bacon
Instructions
1. Bring water and chicken broth to a boil. Add in uncooked grits and salt. Stir immediately to ensure grits do not lump and are evenly dispersed in the water. Turn the heat to low and simmer grits, stirring occasionally, for about 5 minutes or until all the liquid is absorbed. 2. Once the grits are cooked, remove from heat and add in butter, spices & cheese if desired. 3. In a skillet over medium heat, add butter, garlic & cooked bacon and sauté for about 2 minutes. 4. Season the shrimp with Cajun seasoning and sauté for about 3 minutes on each side depending on the size of shrimp. 5. To serve, add grits to a bowl or plate, then top with shrimp and fresh chives.
