Cranberry Pork

This Cranberry Pork is one of my all time favorite recipes and has been in my cookbook for years. I make it every holiday because it’s stunning, festive, and always a hit. You need this on your table!

What you need

bunch fresh sage

cup whole berry cranberry sauce

tsp pepper

tsp dried thyme

cup goat cheese

tsp garlic powder

tsp table salt

tsp dry mustard

tsp dried sage

tbsp honey

cup dried cranberries
pork tenderloin

tbsp water

tsp pumpkin pie spice

cup pecan nuts
Instructions
Optional step: marinate the pork in cranberry sauce overnight. 1. Preheat the oven to 425 degrees. 2. Butterfly the pork so you can stuff it. Sprinkle with my [Not So] Simple Spice or salt & pepper. 3. Add the cranberries then pecans & goat cheese. 4. Wrap up and secure with kitchen twine. 5. Place pork on a greased cookie sheet and rub the spice mixture (2 tsp salt, 1/2 tsp pepper, 1 tsp garlic powder, 1/4 tsp dry mustard, 1/2 tsp pumpkin pie spice, 1/2 tsp dried thyme, 1/2 tsp dried sage) onto the pork. 6. Bake for 40 minutes or until the internal temperature reaches at least 145 degrees. 7. Optional: add cranberry topping (1/2 cup dried cranberries mixed with 2 tbsp water & 3 tbsp honey) with fresh thyme & sage. Enjoy!View original recipe
